⅔ cup powdered sugar
¼ cup cornstarch
½ teaspoon Kosher salt
¾ cup unsalted butter
cold and diced
1 ¼ cups light brown sugar
packed
½ cup light corn syrup
¼ cup unsalted butter
4 cups coarsely chopped pecans
½ cup heavy cream
2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine flour, powdered sugar, cornstarch, and salt.
- Add the cold diced butter and mix until the texture resembles coarse crumbs.
- Press the mixture into the prepared baking pan and bake for 15 minutes.
- In a large saucepan, combine brown sugar, corn syrup, and butter over medium heat, stirring until melted.
- Remove from heat and stir in the heavy cream, vanilla extract, and chopped pecans.
- Pour the filling over the pre-baked crust and return to the oven for an additional 15-20 minutes, or until set.
- Allow to cool completely in the pan before cutting into bars and serving.
Notes
For a richer flavor, consider toasting the pecans before adding them to the filling.
