Ingredients
1 cup of pecan halves
1/2 cup of unsalted butter
1 cup of packed brown sugar
1/4 cup of heavy cream
1/2 teaspoon of vanilla extract
Pinch of salt
1 and 1/2 cups of all-purpose flour
1 and 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of unsalted butter
softened
1 cup of granulated sugar
2 large eggs
1 teaspoon of vanilla extract
1/2 cup of whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a saucepan over medium heat, melt 1/2 cup of butter. Stir in brown sugar, heavy cream, vanilla extract, and a pinch of salt until smooth. Remove from heat and stir in pecan halves.
- Pour the pecan mixture into the bottom of the prepared cake pan, spreading evenly.
- In a mixing bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, beat 1/2 cup of softened butter and granulated sugar until fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with whole milk, until just combined.
- Pour the cake batter over the pecan topping in the pan.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a serving plate and allow to cool completely before slicing.
Notes
For best results, let the cake cool entirely before serving to allow the pecan topping to set.
