8 oz of rotini or penne pasta
6 oz of sliced pepperoni
1 cup of cherry tomatoes, halved
1 cup of cucumber, diced
½ cup of red onion, finely chopped
1 cup of shredded mozzarella cheese
½ cup of black olives, sliced
1 cup of Italian dressing
Fresh parsley, chopped (optional, for garnish)
Instructions
Bring a large pot of salted water to a boil. Add your pasta and cook it according to the package instructions until al dente, usually around 8-10 minutes.
Once cooked, drain the pasta in a colander and rinse it with cold water to stop the cooking process.
While the pasta is cooling, chop your cherry tomatoes, cucumber, and red onion.
