  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch (optional)
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Season the chuck roast generously on all sides with salt and pepper. Don’t be shy; this is a big piece of meat, and it loves flavor!
  • In a large, heavy pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until it’s beautifully browned.

  • If you like a thicker gravy, remove the roast at the end, mix the cornstarch with cold water in a small bowl, and whisk it into the pot. Simmer for a few more minutes until thickened.
  • Before serving, remove the bay leaves and sprinkle with fresh parsley.
