1.5 pounds of chuck roast
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, peeled and sliced
2 stalks celery, chopped
2 cups beef broth
1 teaspoon dried thyme
2 bay leaves
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch (optional)
Fresh parsley, chopped (for garnish)
Instructions
Season the chuck roast generously on all sides with salt and pepper. Don’t be shy; this is a big piece of meat, and it loves flavor!
In a large, heavy pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until it’s beautifully browned.
Remove the roast and set it aside on a plate. In the same pot, add the chopped onion and sauté for about 3 minutes until it’s soft and fragrant.
Stir in the minced garlic, carrots, and celery. Cook for another 2 minutes.

If you like a thicker gravy, remove the roast at the end, mix the cornstarch with cold water in a small bowl, and whisk it into the pot. Simmer for a few more minutes until thickened.
Before serving, remove the bay leaves and sprinkle with fresh parsley.
