For the Chicken:

  • 4 boneless, skinless chicken thighs

  • 2 tbsp olive oil

  • 2 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • Salt and black pepper, to taste

  • Juice of 1 lime

For the Aji Verde (Green Sauce):

  • 1 cup fresh cilantro

  • 1 jalapeño (seeded for less heat)

  • 1 garlic clove

  • 2 tbsp mayonnaise

  • 2 tbsp Greek yogurt or sour cream

  • 1 tbsp lime juice

  • 1 tbsp olive oil

  • Salt to taste


Instructions

  1. Marinate the Chicken: In a bowl, combine chicken with olive oil, cumin, paprika, garlic powder, oregano, lime juice, salt, and pepper. Let sit for at least 15 minutes.

  2. Cook the Chicken: Grill or sear in a skillet over medium-high heat for 6–7 minutes per side until cooked through and golden brown.

  3. Make Aji Verde: Blend all green sauce ingredients until smooth and creamy.

  4. Serve: Plate the chicken and drizzle with green sauce or serve on the side.

Notes

  • Aji Verde is spicy—adjust heat by adding more or less jalapeño.

  • Chicken can also be baked or air-fried.

  • Great with rice, potatoes, or fresh salad.
