Ingredients
For the Chicken:

4 boneless, skinless chicken breasts (or thighs)

For the Aji Verde Sauce:

Instructions

Marinate the chicken: In a small bowl, mix together olive oil, paprika, cumin, garlic powder, lime juice, salt, and pepper. Rub the mixture onto the chicken breasts, ensuring they are well-coated. Let it marinate for at least 30 minutes (or up to 2 hours) in the fridge.

Cook the chicken: Preheat the grill or a grill pan over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F or 74°C). Alternatively, bake the chicken in a preheated oven at 375°F (190°C) for 25-30 minutes, depending on thickness.

Make the Aji Verde Sauce: In a blender or food processor, combine cilantro, jalapeño, mayonnaise, sour cream (or Greek yogurt), lime juice, garlic, olive oil, salt, and pepper. Blend until smooth.
