2 cups of cooked chicken, shredded
1 cup of pesto
1/2 cup of cherry tomatoes, halved
1/2 cup of cucumber, diced
1/4 cup of red onion, finely chopped
1/4 cup of feta cheese, crumbled
Salt and pepper to taste
Fresh greens for serving
If your chicken isn't cooked yet, I recommend using rotisserie chicken for convenience. Shred it into bite-sized pieces.
In a large bowl, add the shredded chicken. Pour in the pesto and stir gently until the chicken is well-coated.
