9 lasagna noodles (preferably no-boil or cooked until al dente)
2 cups of shredded cooked chicken
1 cup of ricotta cheese
1 cup of mozzarella cheese, shredded
1 cup of mushrooms, finely chopped
1 cup of pesto
1/2 cup of grated Parmesan cheese
1 egg
Salt and pepper, to taste
Olive oil for sautéing
Instructions
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add a splash of olive oil and sauté the chopped mushrooms for about 5 minutes until soft and golden. Season with salt and pepper.
In a mixing bowl, combine shredded chicken, ricotta cheese, half of the mozzarella, sautéed mushrooms, egg, and pesto. Mix well.
Spread a thin layer of pesto on the bottom of a baking dish. Take a lasagna noodle, spread a couple of tablespoons of the chicken mixture along it, and roll it up. Place seam-side down in the baking dish. Repeat with remaining noodles.
Pour the remaining pesto over the rollups. Sprinkle the rest of the mozzarella and grated Parmesan cheese on top.
Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
