1 pound of cheese tortellini (fresh or frozen)
1 cup of pesto (store-bought or homemade)
1 cup of cherry tomatoes, halved
1 cup of cucumbers, diced
1/2 cup of red bell pepper, diced
1/4 cup of red onion, finely chopped
1/2 cup of mozzarella balls (or diced mozzarella)
1/4 cup of grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
In a large pot, bring salted water to a boil. Add the tortellini and cook according to the package instructions, usually around 3-5 minutes for fresh tortellini. Once cooked, drain the tortellini and rinse under cold water.
While the tortellini is cooking, chop up your veggies: slice the cherry tomatoes, dice the cucumbers, chop the red bell pepper, and finely chop the red onion.
In a large mixing bowl, combine the cooled tortellini, chopped veggies, mozzarella balls, and pesto. Gently toss everything until evenly coated.
Sprinkle in the Parmesan cheese, salt, and pepper, and give it another gentle toss. Taste and adjust the seasoning as needed.
Add fresh basil leaves for garnish. Serve immediately or chill in the fridge for about 30 minutes before serving.
