Ingredients
2 tablespoons olive oil
1 large onion chopped
1 green bell pepper chopped
1 red bell pepper chopped
1 pound sirloin steak thinly sliced against the grain
8 cups beef broth
1 (14.5 ounce) can diced tomatoes undrained
1 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes optional
Salt and freshly ground black pepper to taste
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups milk
8 ounces cream cheese softened
8 ounces shredded provolone cheese
4 ounces shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, green bell pepper, and red bell pepper. Sauté until the vegetables are tender, about 5-7 minutes.
- Add the thinly sliced sirloin steak to the pot and cook until browned, about 4-5 minutes.
- Pour in the beef broth and add the diced tomatoes, Worcestershire sauce, dried thyme, red pepper flakes, and season with salt and pepper. Bring the mixture to a simmer and let it cook for 15 minutes.
