Ingredients
4 beef loin chops 1/2 cup pineapple juice 1/4 cup soy sauce 2 tablespoons brown sugar 2 tablespoons olive oil 2 garlic cloves, minced 1/2 teaspoon ground ginger 1/4 teaspoon black pepper Pineapple rings for grilling Chopped green onions (for garnish)
Instructions
In a bowl, mix pineapple juice, soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper. Place beef chops in a resealable bag or dish and pour marinade over. Refrigerate for 1–2 hours. Preheat grill to medium-high heat. Remove chops from marinade and let excess drip off. Grill beef chops for 4–5 minutes per side or until desired doneness. Grill pineapple rings for 2 minutes per side until charred. Serve chops topped with grilled pineapple and garnish with green onions.
Notes
For added spice, add red pepper flakes to the marinade. Pork chops work great as an alternative. Serve with grilled veggies or rice for a complete meal.
