  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup jasmine or basmati rice
  • 2 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp hoisin sauce
  • 1 tsp garlic powder
  • ½ tsp ginger powder
  • ½ tsp red pepper flakes (optional)
  • ½ cup bell peppers, chopped
  • ½ cup green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional)

Instructions

  • Cook the Chicken

    • Heat olive oil in a large skillet over medium heat.
    • Add chicken, season with garlic powder, ginger, and red pepper flakes, and cook until browned.
  • Add Pineapple & Peppers

    • Stir in pineapple chunks and bell peppers, cooking for 2 minutes until slightly caramelized.
  • Simmer with Rice

    • Add rice, chicken broth, soy sauce, honey, and hoisin sauce.
    • Stir well, bring to a boil, then reduce heat, cover, and simmer for 15 minutes until rice is tender.
  • Serve & Enjoy

    • Fluff the rice, garnish with green onions and sesame seeds, and serve warm.

Notes

  • For extra flavor, marinate the chicken in soy sauce, ginger, and honey for 30 minutes before cooking.
