- 2 chicken breasts, diced
- 1 cup cooked rice (white or jasmine)
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup pineapple juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp ginger, grated
- 1/2 tsp chili flakes (optional)
- 1/4 cup bell peppers, sliced
- 2 tbsp green onions, chopped
Instructions
- Cook the Chicken: Heat oil in a pan. Sauté chicken until golden and cooked through.
- Make the Sauce: Add garlic, ginger, soy sauce, honey, pineapple juice, and chili flakes. Stir well.
- Add Pineapple & Peppers: Toss in pineapple chunks and bell peppers. Simmer for 3-4 minutes.
