This Pineapple Juice Cake is a moist, tropical-flavored dessert perfect for any occasion. The pineapple juice adds a subtle sweetness and tender crumb.
Ingredients
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup pineapple juice
1/2 cup sour cream
Instructions
1. Preheat oven to 350°F (175°C).
2. Grease and flour a 9×5-inch loaf pan.
3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
4. In another bowl, cream butter and sugar until light and fluffy.
5. Add eggs one at a time, mixing well after each addition.
6. Stir in vanilla extract.
7. Alternately add the dry ingredients and pineapple juice to the butter mixture, starting and ending with dry ingredients.
8. Fold in sour cream until just combined.
9. Pour batter into prepared pan and smooth the top.
10. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
11. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, top with a pineapple glaze or toasted coconut.
Store cake tightly covered at room temperature for up to 3 days.
