1 (9-inch) pie crust, homemade or store-bought
2 cups fresh pineapple, diced
3/4 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
2 tablespoons lemon juice
1 tablespoon butter, cut into small pieces
1 egg, beaten
Preheat your oven to 425°F (220°C).
If you're using homemade dough, roll it out and fit it into a 9-inch pie pan. If you're using store-bought, follow the package instructions.
In a mixing bowl, combine the diced pineapple, sugar, flour, cinnamon (if using), and lemon juice. Stir gently until everything is nicely coated.
Pour the pineapple mixture into the prepared pie crust. Dot the top with small pieces of butter.
Add a top crust or lattice crust and brush with the beaten egg, if desired.
Bake for about 30-35 minutes, or until the crust is golden and the filling is bubbly.
Let cool for 20-30 minutes before slicing.
