8 Maraschino cherries stems removed

3 large (~ 150 g) eggs room temperature

2 cups (400 g) granulated sugar

12 tbsps. (170 g) unsalted butter melted

⅓ cup (80 ml) canola oil

2 tsps. (10 ml) vanilla extract

½ cup (120 ml) buttermilk room temperature

½ cup (120 g) plain

full-fat Greek yogurt room temperature

3 cups (375 g) all-purpose flour (plus extra for pan prep)

1 tsp. (4 g) baking powder

½ tsp. (2 g) baking soda

½ tsp. (3 g) table salt


Instructions

  • Preheat your oven to 350°F (175°C) and grease a Bundt pan with extra melted butter.
  • In a bowl, combine melted butter, brown sugar, and ground cinnamon. Pour this mixture into the prepared Bundt pan, spreading evenly.
  • Arrange pineapple slices on top of the sugar mixture, placing a Maraschino cherry in the center of each pineapple ring.
  • In a separate bowl, whisk together eggs, granulated sugar, melted butter, canola oil, vanilla extract, buttermilk, and Greek yogurt until smooth.
  • In another bowl, mix flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Pour the cake batter over the pineapple and cherry layer in the Bundt pan.
  • Bake for about 30 minutes or until a toothpick inserted comes out clean.
