4 cups of all-purpose flour
1/4 cup of granulated sugar
2 1/4 teaspoons of instant yeast
1 teaspoon of salt
1 cup of whole milk, warmed
1/3 cup of unsalted butter, melted
2 large eggs
1 cup of chopped pistachios
1 cup of dried apricots, chopped
1/2 cup of brown sugar, packed
1 teaspoon of ground cinnamon
1/4 cup of unsalted butter, softened
1/2 cup of apricot preserves
1 tablespoon of fresh lemon juice
1 teaspoon of vanilla extract
Instructions
In a small bowl, combine the warm milk and sugar. Stir in the yeast and let it sit for about 5-10 minutes until it’s foamy.
In a large mixing bowl, combine flour and salt. Once the yeast mixture is ready, add it to the flour along with the melted butter and eggs. Mix until a dough begins to form.
On a floured surface, knead the dough for about 5-7 minutes until it’s smooth and elastic.
Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm spot until it doubles in size (about 1-1.5 hours).
While the dough rises, mix together the chopped pistachios, chopped apricots, brown sugar, and cinnamon in a bowl.
Once the dough has risen, punch it down to release the air. Roll it out on a floured surface into a rectangle, about 1/4-inch thick.
Spread the softened butter over the dough, then sprinkle the pistachio and apricot mixture evenly over the top.
Starting from the long edge, gently roll the dough into a tight log. Slice the log into 12 equal pieces and place them cut-side up in a greased baking dish.
Cover the dish with a towel and let them rise again until they puff up (another 30-45 minutes).
Preheat the oven to 350°F (175°C). Bake the sticky buns for about 25-30 minutes or until they’re golden brown.
In a small saucepan, combine apricot preserves, lemon juice, and vanilla extract over low heat until melted and smooth.
Once the buns are out of the oven, let them sit for about 5 minutes before drizzling them generously with the warm glaze.
Serve warm.
