Ingredients

2 large eggs

1/2 cup buttermilk

For the Strawberry Buttercream:

1/2 cup unsalted butter, softened

2 cups powdered sugar

1/4 cup pureed fresh strawberries

1 teaspoon vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

2. In a bowl, whisk flour, ground pistachios, baking powder, baking soda, and salt.

3. In a separate bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, beating well after each.

5. Mix in vanilla extract.

6. Alternate adding flour mixture and buttermilk to the wet ingredients, beginning and ending with flour mixture. Mix until just combined.

7. Divide batter evenly into muffin cups.

8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.

9. Cool cupcakes completely on a wire rack.

10. To make frosting, beat butter until creamy.

11. Gradually add powdered sugar, then mix in strawberry puree, vanilla, and salt.

12. Frost cooled cupcakes with strawberry buttercream.

13. Optional: garnish with chopped pistachios or fresh strawberries.

Notes

Use finely ground pistachios for best texture.

Puree fresh or thawed frozen strawberries for frosting.
