This Pistachio Tiramisu is a delightful twist on the classic Italian dessert, featuring layers of creamy mascarpone, rich pistachio flavor, and coffee-soaked ladyfingers, perfect for impressing your guests.
Ingredients
8 oz (225 g) mascarpone cheese
3 large egg yolks
1/2 cup (100 g) granulated sugar
1 cup (240 ml) heavy cream
1/2 cup (140 g) pistachio paste (or finely ground pistachios made into a paste)
1 cup (240 ml) strong espresso or very strong coffee
cooled
1 package (about 7 oz / 200 g) ladyfingers (savoiardi)
1/2 cup chopped toasted pistachios
for garnish
Instructions
- In a mixing bowl, whisk the egg yolks and sugar together until pale and creamy.
- Add the mascarpone cheese and pistachio paste to the egg mixture and mix until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form and then gently fold it into the mascarpone mixture.
- Dip each ladyfinger briefly in the cooled espresso and arrange them in a serving dish or individual glasses.
- Spread half of the mascarpone mixture over the layer of ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, garnish with chopped toasted pistachios.
Notes
For the best flavor, allow the tiramisu to chill overnight. Adjust the sweetness by varying the amount of sugar in the mascarpone mixture.
