4 small pumpkins (about 4–5 inches in diameter)
1 cup pizza sauce
2 cups shredded mozzarella cheese
1 cup cooked Italian sausage
1/2 cup bell peppers, diced
1/2 cup mushrooms, sliced
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper to taste
Olive oil for drizzling
Fresh basil for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Carefully cut off the tops of each pumpkin and scoop out the insides.
In a large bowl, mix together the pizza sauce, mozzarella cheese, cooked sausage, bell peppers, mushrooms, oregano, garlic powder, and a sprinkle of salt and pepper.
Generously spoon the filling into each pumpkin and leave a little space at the top.
Drizzle each pumpkin with olive oil.
Place the pumpkins on a baking sheet and roast for about 35-40 minutes.
Once out of the oven, let them cool for a few minutes, then sprinkle with fresh basil if using.
