  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup cooked Italian sausage
  • 1/2 cup bell peppers, diced
  • 1/2 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish (optional)

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Carefully cut off the tops of each pumpkin and scoop out the insides.
  • In a large bowl, mix together the pizza sauce, mozzarella cheese, cooked sausage, bell peppers, mushrooms, oregano, garlic powder, and a sprinkle of salt and pepper.
  • Generously spoon the filling into each pumpkin and leave a little space at the top.
  • Drizzle each pumpkin with olive oil.
  • Place the pumpkins on a baking sheet and roast for about 35-40 minutes.
  • Once out of the oven, let them cool for a few minutes, then sprinkle with fresh basil if using.
