This vibrant dish features marinated chicken grilled to perfection with a punchy blend of garlic, paprika, and chili, inspired by the bold and fiery flavors of Portugal.
Ingredients

4 bone-in, skin-on chicken thighs (or 1 whole chicken, butterflied)

3 tbsp olive oil

4 cloves garlic, minced

2 tbsp smoked paprika

1 tbsp lemon juice

1 tbsp red wine vinegar

1 tsp dried oregano

1 tsp salt

½ tsp ground black pepper

½ tsp cayenne pepper (adjust to taste)

Instructions

Make the marinade: In a bowl, mix olive oil, garlic, paprika, lemon juice, vinegar, oregano, salt, pepper, and cayenne until well combined.

Marinate the chicken: Rub the marinade all over the chicken, making sure it’s coated thoroughly. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).

Grill: Preheat your grill to medium-high heat. Grill chicken skin-side down for 5–6 minutes, then flip and grill for another 20–25 minutes, turning occasionally, until fully cooked and nicely charred.

Serve: Let rest for 5 minutes. Garnish with fresh parsley and lemon wedges.

If you don’t have a grill, roast the chicken at 425°F (220°C) for 40–45 minutes.
