Ingredients

  • 4 bone-in, skin-on chicken thighs (or 1 whole chicken, butterflied)

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 2 tbsp smoked paprika

  • 1 tbsp lemon juice

  • 1 tbsp red wine vinegar

  • 1 tsp dried oregano

  • 1 tsp salt

  • ½ tsp ground black pepper

  • ½ tsp cayenne pepper (adjust to taste)

  • Optional: fresh parsley and lemon wedges, for garnish


Instructions

  1. Make the marinade: In a bowl, mix olive oil, garlic, paprika, lemon juice, vinegar, oregano, salt, pepper, and cayenne until well combined.

  2. Marinate the chicken: Rub the marinade all over the chicken, making sure it’s coated thoroughly. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).

  3. Grill: Preheat your grill to medium-high heat. Grill chicken skin-side down for 5–6 minutes, then flip and grill for another 20–25 minutes, turning occasionally, until fully cooked and nicely charred.

  4. Serve: Let rest for 5 minutes. Garnish with fresh parsley and lemon wedges.

Notes

  • If you don’t have a grill, roast the chicken at 425°F (220°C) for 40–45 minutes.

  • For extra heat, add a splash of Piri Piri sauce before serving.

  • Serve with rice, roasted potatoes, or a crisp green salad.
