2 large russet potatoes (about 2 pounds), peeled and cut into sticks
1 cup of shredded cheese (cheddar, mozzarella, or your favorite blend)
1 cup all-purpose flour
1 cup breadcrumbs (panko or regular, for extra crunch)
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
Vegetable oil, for frying
Instructions
Fill a large pot with water and add a pinch of salt. Bring it to a boil and then add the potato sticks. Cook for about 5-7 minutes until they are just tender but still firm.
Once cooked, drain the potatoes and spread them out on a baking sheet to cool completely. Pat them dry with a paper towel.
In one bowl, place the flour along with garlic powder, onion powder, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, spread out the breadcrumbs.
Take a cooled potato stick, dip it in the flour mixture, then into the egg, and finally coat it with breadcrumbs.
In a large skillet, pour in enough vegetable oil to cover the bottom (about ½ inch) and heat over medium-high until hot but not smoking.
Carefully add the coated potato sticks to the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
Transfer the sticks to a plate lined with paper towels to absorb excess oil. Let them cool slightly before serving.
