Ingredients

  • 3 leeks, cleaned & sliced

  • 4 cups chicken or vegetable broth

  • 1 cup heavy cream or milk

  • 2 tbsp butter

  • Salt & pepper to taste


Instructions

  • Sauté leeks in butter until soft.

  • Add potatoes and broth; simmer until potatoes are tender (about 20 minutes).

  • Blend until smooth.

  • Stir in cream, season with salt and pepper. Warm through.

  • Use an immersion blender for easy blending.
