¾ cup granulated sugar

1 tsp ground cinnamon

¼ cup melted butter (for swirl)

¼ cup brown sugar

1 tsp ground cinnamon (for swirl)

½ cup powdered sugar (for glaze)

½ tsp vanilla extract (for glaze)

23 tablespoon milk (for glaze)


Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large bowl, mix together the pumpkin puree, melted butter, granulated sugar, egg, and vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  • In a small bowl, combine the melted butter, brown sugar, and ground cinnamon for the swirl. Set aside.
  • Spoon a tablespoon of the muffin batter into each cupcake liner, followed by a teaspoon of the cinnamon swirl mixture, then top with another tablespoon of batter.
  • Use a toothpick to gently swirl the batter and cinnamon mixture together.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • While the muffins bake, prepare the cream cheese glaze by whisking together powdered sugar, vanilla extract, and milk until smooth.
  • Once the muffins have cooled, drizzle the cream cheese glaze over the top before serving.
