These Pumpkin Cinnamon Roll Muffins are a delightful blend of spiced pumpkin and sweet cinnamon swirls, topped with a creamy glaze. Perfect for cozy mornings or as a sweet treat any time of the day.
Ingredients
1 cup canned pumpkin puree
½ cup melted butter (or vegetable oil)
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
¼ cup melted butter (for swirl)
¼ cup brown sugar
1 tsp ground cinnamon (for swirl)
½ cup powdered sugar (for glaze)
½ tsp vanilla extract (for glaze)
2–3 tablespoon milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, mix together the pumpkin puree, melted butter, granulated sugar, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- In a small bowl, combine the melted butter, brown sugar, and ground cinnamon for the swirl. Set aside.
- Spoon a tablespoon of the muffin batter into each cupcake liner, followed by a teaspoon of the cinnamon swirl mixture, then top with another tablespoon of batter.
- Use a toothpick to gently swirl the batter and cinnamon mixture together.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- While the muffins bake, prepare the cream cheese glaze by whisking together powdered sugar, vanilla extract, and milk until smooth.
- Once the muffins have cooled, drizzle the cream cheese glaze over the top before serving.
Notes
Store any leftover muffins in an airtight container for up to 2 days. Reheat briefly in the microwave for a warm treat.
