1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, diced
1 pound smoked sausage, sliced
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 cup chicken broth
1 tablespoon Cajun seasoning
1 cup long-grain rice
Salt and pepper, to taste
1 cup frozen peas (optional)
Chopped green onions, for garnish (optional)
Heat the oil in a large pot over medium heat.
Add the diced chicken thighs and sauté for about 5 minutes, or until they start to brown.
Add the sliced sausage and cook for another 3-4 minutes.
Stir in the chopped onion, green and red bell peppers, and garlic. Cook everything together until the veggies are tender, about 5 minutes.
Pour in the diced tomatoes, chicken broth, and Cajun seasoning. Stir and let it simmer for about 2 minutes.
Add the rice, stir well, and bring to a boil. Once bubbling, reduce heat to low.
Cover the pot and let it simmer for 15-20 minutes, or until the rice has absorbed the liquid and is tender.
If using peas, add them during the last 5 minutes of cooking.
Serve it up, fluffing everything with a fork and adjust seasoning if needed.
