2 cups of cooked rice
1 cup of shredded carrots
1 bell pepper, thinly sliced
1 cucumber, diced
½ cup of green onions, chopped
½ cup of cilantro, chopped
1 cup of cooked edamame
¼ cup of peanut butter
2 tablespoons of soy sauce
1 tablespoon of sesame oil
1 tablespoon of rice vinegar
1 tablespoon of honey or maple syrup
Water, as needed

Instructions
Cook the rice as directed or use leftover rice. Spread it on a baking sheet to cool.
Slice and dice the bell pepper, cucumber, green onions, and carrots.
In a bowl, whisk peanut butter, soy sauce, sesame oil, rice vinegar, honey, and water until smooth.
In a large bowl, combine the cooled rice, veggies, and edamame. Pour the dressing over and toss gently.
Fold in cilantro just before serving.
