1 pint cherry tomatoes, halved
1 cucumber, diced
1 red onion, sliced thin (optional)
1 cup cooked quinoa or brown rice
1 cup feta cheese, crumbled
1 lemon, sliced
A handful of fresh parsley or basil, chopped
Optional: tzatziki sauce for drizzling
Instructions
In a small bowl, mix together the olive oil, smoked paprika, garlic powder, salt, and pepper. Rub this seasoning all over the steak and let it sit for about 10-15 minutes while you prep the veggies.
