- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- Juice of 1 lemon
- ½ tsp red pepper flakes (optional)
- Salt & pepper to taste
- ¼ cup chopped parsley
Instructions
- Cook quinoa in water or broth according to package instructions.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp, paprika, red pepper flakes, salt, and pepper. Cook for 2-3 minutes per side until pink.
- Drizzle with lemon juice and toss with parsley.
- Serve shrimp over quinoa and enjoy!
