1 pound fresh carrots, peeled and sliced (about 1/4 inch thick)
2 tablespoons honey (more or less to taste)
2 tablespoons unsalted butter, softened
Salt and pepper, to taste
1/4 cup crumbled goat cheese
1 tablespoon fresh parsley, chopped (for garnish)
Start by peeling your carrots, and then slice them into even pieces, about 1/4 inch thick.
In a large skillet, melt the butter over medium heat.
Add the sliced carrots to the skillet, stirring to coat them in the butter. Sauté for about 5 minutes.
Drizzle the honey over the carrots, stirring to combine. Season with salt and pepper to taste.
Continue to cook for another 5-10 minutes until they’re tender and glistening.
Once done, remove them from heat and sprinkle the crumbled goat cheese over the top.
Add a sprinkle of chopped parsley for garnish.
