Creamy, flavorful, and ready in a flash — this coconut curry chicken is the ultimate one-pan comfort dish. With tender chicken and a rich, spiced sauce, it’s perfect over rice or with naan for dipping.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cubed

  • 1 tbsp oil (olive or coconut)

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp grated fresh ginger

  • 2 tbsp red curry paste (or yellow/green if preferred)

  • 1 can (14 oz) coconut milk (full fat)

  • 1 tbsp soy sauce or fish sauce

  • 1 tsp brown sugar (optional)

  • Juice of 1/2 lime (optional)

  • Fresh cilantro, for garnish


Instructions

  1. Sauté aromatics: Heat oil in a skillet over medium heat. Sauté onion for 2–3 minutes. Add garlic and ginger; cook 1 minute.

  2. Cook chicken: Add chicken and brown on all sides, 4–5 minutes.

  3. Add curry & coconut milk: Stir in curry paste and cook 1 minute. Pour in coconut milk, soy sauce, and brown sugar.

  4. Simmer: Reduce heat and simmer for 10–12 minutes until chicken is fully cooked and sauce thickens slightly.

  5. Finish & serve: Squeeze in lime juice if using. Serve over rice and garnish with cilantro.

Notes

  • Adjust spice level by using more or less curry paste.

  • Add veggies like bell peppers, spinach, or peas for extra nutrition.

  • Use lite coconut milk for a lighter version, but full-fat gives the richest flavor.
