Creamy, flavorful, and ready in a flash — this coconut curry chicken is the ultimate one-pan comfort dish. With tender chicken and a rich, spiced sauce, it’s perfect over rice or with naan for dipping.
Ingredients

1 lb (450g) boneless, skinless chicken breasts or thighs, cubed

1 tbsp oil (olive or coconut)

1 small onion, diced

2 garlic cloves, minced

1 tbsp grated fresh ginger

2 tbsp red curry paste (or yellow/green if preferred)

1 can (14 oz) coconut milk (full fat)

1 tbsp soy sauce or fish sauce

1 tsp brown sugar (optional)

Juice of 1/2 lime (optional)

Fresh cilantro, for garnish
Instructions

Sauté aromatics: Heat oil in a skillet over medium heat. Sauté onion for 2–3 minutes. Add garlic and ginger; cook 1 minute.

Cook chicken: Add chicken and brown on all sides, 4–5 minutes.

Add curry & coconut milk: Stir in curry paste and cook 1 minute. Pour in coconut milk, soy sauce, and brown sugar.

Simmer: Reduce heat and simmer for 10–12 minutes until chicken is fully cooked and sauce thickens slightly.

Finish & serve: Squeeze in lime juice if using. Serve over rice and garnish with cilantro.

Adjust spice level by using more or less curry paste.
