1 cup of all-purpose flour
1/2 cup of unsalted butter, chilled and diced
1/4 teaspoon of salt
2 tablespoons of ice water (more if needed)
2 cups of fresh cranberries (or frozen, thawed)
1/4 cup of sugar (adjust based on sweetness preference)
1 jalapeño, finely chopped (remove seeds for less heat)
1 tablespoon of lime juice
1/2 teaspoon of cinnamon
1/4 teaspoon of vanilla extract
Fresh cilantro or parsley, chopped (for garnish)
Sour cream or Greek yogurt (optional, for garnish)
Instructions
In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until it resembles coarse crumbs.
Slowly add ice water, one tablespoon at a time, until the dough comes together.
Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Preheat the oven to 375°F (190°C).
In a saucepan, combine cranberries, sugar, chopped jalapeño, lime juice, cinnamon, and vanilla extract. Stir over medium heat until cranberries burst and mixture thickens, about 10 minutes. Let cool.
Roll out the chilled dough to about 1/8-inch thickness. Cut circles and fit into a mini muffin tin.
Spoon the cranberry filling into each tartlet shell, filling them about 3/4 full.
Bake for 15-18 minutes or until edges are golden brown.
