Ingredients

1½ cups fresh or frozen raspberries

2 tablespoons sugar (plus more to taste)

¾ cup heavy whipping cream

½ cup mascarpone cheese

1 teaspoon vanilla extract

Optional: fresh mint leaves, extra berries for garnish
Instructions

Prepare raspberries: Mash raspberries with sugar in a bowl. Set aside or briefly chill.

Whip mascarpone: In a cold bowl, beat cream, mascarpone, vanilla, and 1 tbsp sugar until soft peaks form.

Fold & swirl: Gently fold half the raspberry mix into the mascarpone cream. Swirl for a marbled effect.

Assemble: Spoon into glasses. Top with remaining raspberry sauce and fresh berries.
