Ingredients

  • 1½ cups fresh or frozen raspberries

  • 2 tablespoons sugar (plus more to taste)

  • ¾ cup heavy whipping cream

  • ½ cup mascarpone cheese

  • 1 teaspoon vanilla extract

  • Optional: fresh mint leaves, extra berries for garnish


Instructions

  1. Prepare raspberries: Mash raspberries with sugar in a bowl. Set aside or briefly chill.

  2. Whip mascarpone: In a cold bowl, beat cream, mascarpone, vanilla, and 1 tbsp sugar until soft peaks form.

  3. Fold & swirl: Gently fold half the raspberry mix into the mascarpone cream. Swirl for a marbled effect.

  4. Assemble: Spoon into glasses. Top with remaining raspberry sauce and fresh berries.

  5. Chill & serve: Refrigerate briefly or serve immediately, garnished with mint.

  • Use thawed frozen raspberries if fresh ones aren’t available.
