9 ounces of fresh or frozen cheese ravioli
1 tablespoon of olive oil
2 cups of cherry tomatoes, halved
1 bunch of asparagus, trimmed and cut into bite-sized pieces
3 cloves of garlic, minced
1 teaspoon of dried Italian herbs
Salt and pepper, to taste
Fresh basil leaves, for garnish
Parmesan cheese, grated, for serving
Instructions
Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions. Fresh ravioli usually takes about 3-4 minutes, while frozen might need an extra minute. Once they float to the surface, they're done! Drain and set aside.
Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, toss in the minced garlic and sauté for about 30 seconds, just until fragrant. Be careful not to let it burn.
Add the Cherry Tomatoes: Add the halved cherry tomatoes to the skillet. Stir and let them cook for about 3 minutes until they start to soften.
Mix in the Asparagus: Toss in the asparagus pieces and dried Italian herbs. Season with salt and pepper. Cook for another 3-4 minutes, until the asparagus is just tender.
Combine Everything: Add the cooked ravioli to the skillet and gently toss everything together, being careful not to break the ravioli.
Finish and Serve: Once everything is well combined and heated through, take it off the heat. Serve warm, garnished with fresh basil and a sprinkle of grated Parmesan cheese.
