2 fillets of red snapper (about 6 ounces each)
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional)
1 tablespoon unsalted butter
1/2 cup chopped onion
1/2 cup chopped bell pepper (any color)
2 cloves garlic, minced
1 cup heavy cream
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
2 green onions, chopped (for garnish)
Instructions
Rinse the red snapper fillets under cold water and pat them dry with paper towels.
Rub olive oil over the fillets, and then sprinkle with salt, pepper, paprika, and cayenne (if using) on both sides. Let them rest for about 10 minutes.
In a large skillet, heat a tablespoon of butter over medium-high heat until melted and bubbly.
Carefully place the seasoned fillets in the skillet. Cook for about 3–4 minutes on each side, or until fish flakes easily with a fork. Remove and set aside.
In the same skillet, toss in another tablespoon of butter along with chopped onion and bell pepper. Sauté until veggies are soft, about 5 minutes.
Add minced garlic and cook for another 30 seconds until fragrant.
Pour in heavy cream, Worcestershire sauce, and lemon juice. Stir to combine and let simmer for about 5 minutes to thicken.
Gently slide fillets back into the sauce, spooning some over the top. Heat through for another 2–3 minutes.
Serve fillets on a plate, drizzling creamy Creole sauce over the top and garnish with chopped green onions.
