  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoon unsalted butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 2 green onions, chopped (for garnish)

  • Instructions

  • Rinse the red snapper fillets under cold water and pat them dry with paper towels.
  • Rub olive oil over the fillets, and then sprinkle with salt, pepper, paprika, and cayenne (if using) on both sides. Let them rest for about 10 minutes.
  • In a large skillet, heat a tablespoon of butter over medium-high heat until melted and bubbly.
  • Carefully place the seasoned fillets in the skillet. Cook for about 3–4 minutes on each side, or until fish flakes easily with a fork. Remove and set aside.
  • In the same skillet, toss in another tablespoon of butter along with chopped onion and bell pepper. Sauté until veggies are soft, about 5 minutes.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Pour in heavy cream, Worcestershire sauce, and lemon juice. Stir to combine and let simmer for about 5 minutes to thicken.
  • Gently slide fillets back into the sauce, spooning some over the top. Heat through for another 2–3 minutes.
  • Serve fillets on a plate, drizzling creamy Creole sauce over the top and garnish with chopped green onions.
