  • 1 cup of sour cream
  • ½ cup of unsalted butter, softened (for frosting)
  • 8 ounces of cream cheese, softened (for frosting)
  • 3 cups of powdered sugar (for frosting)
  • 1 teaspoon of vanilla extract (for frosting)

  • Instructions

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
  • Beat the softened cream cheese until smooth, then gradually add in the sugar. Mix well, add eggs one at a time, being careful not to overmix.
  • Add vanilla extract, red food coloring, and vinegar to the mixture, blending until combined. Gently fold in sour cream.
  • Pour the cheesecake batter over the cooled crust, leveling it out and bake for 60-70 minutes.
  • Cool in the oven for about an hour before transferring to the countertop to cool completely. Refrigerate for at least 4 hours.
  • For the frosting, combine softened butter and cream cheese until creamy, then gradually add powdered sugar and vanilla.
