1 cup of all-purpose flour
1/2 cup of unsweetened cocoa powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of unsalted butter, softened
1/2 cup of granulated sugar
1/2 cup of packed brown sugar
1 large egg
1 teaspoon of vanilla extract
1/2 cup of chocolate chips
1 package of Reese’s Peanut Butter Cups (mini or regular, cut into halves or quarters)
Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a large bowl, cream the softened butter with granulated and brown sugar until light and fluffy, about 2-3 minutes.
Beat in the egg and vanilla extract until well combined.
Gradually add the flour and cocoa mixture to the wet ingredients, mixing just until combined.
Stir in the chocolate chips until evenly distributed.
Grease a muffin tin with non-stick spray and scoop about a tablespoon of dough into each cup, pressing it down to create little cups.
Place a Reese’s Peanut Butter Cup inside each cookie cup.
Pop the muffin tin into the oven and bake for about 10-12 minutes.
Allow to cool in the pan for a few minutes, then gently remove them and let cool completely on a wire rack.
