Description
These rhubarb oatmeal bars combine a buttery oat crust with a sweet-tart rhubarb filling and a crumbly topping. Perfect for dessert or an afternoon snack, they’re easy to make and bursting with flavor!
Ingredients
For the Crust & Topping:
- 1 ½ cups rolled oats
- 1 ¼ cups all-purpose flour
- ½ cup brown sugar
- ½ tsp cinnamon
- ½ tsp salt
- ¾ cup butter, melted
For the Rhubarb Filling:
- 2 cups rhubarb, chopped
- ½ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
Instructions
1️⃣ Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
2️⃣ In a bowl, mix oats, flour, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly.
3️⃣ Press half of the oat mixture into the bottom of the baking dish.
4️⃣ In another bowl, toss rhubarb with sugar, cornstarch, and vanilla. Spread over the crust.
5️⃣ Sprinkle the remaining oat mixture on top.
6️⃣ Bake for 35-40 minutes, until golden and bubbly. Let cool before slicing.
Notes
✔️ Add strawberries for extra sweetness.
✔️ Swap brown sugar for honey or maple syrup for a different twist.
✔️ Store leftovers in an airtight container for up to 5 days.
