2 tablespoons olive oil
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
Salt and black pepper to taste
5 cups mixed greens (spinach, arugula, or your favorite salad greens)
1/2 cup crumbled feta cheese
1/4 cup sunflower seeds (or nuts of your choice)
2 tablespoons balsamic vinegar
1 tablespoon honey (or maple syrup for a vegan option)
Instructions
Preheat your oven to 400°F (200°C).
Toss pumpkin cubes in a large bowl with olive oil, cinnamon, nutmeg, salt, and pepper until well coated.
Spread the seasoned pumpkin cubes evenly on a baking sheet lined with parchment paper. Roast in the oven for about 25-30 minutes, or until golden brown and fork-tender.
While the pumpkin is roasting, place mixed greens in a large serving bowl.
In a small bowl, whisk together balsamic vinegar and honey until well combined.
Once the pumpkin is done roasting, let it cool slightly for about 5 minutes then add the warm pumpkin on top of the greens.
Sprinkle the crumbled feta and sunflower seeds generously over the top.
