2 slices of crusty bread (sourdough or ciabatta)
1 medium apple (Honeycrisp or Granny Smith)
2–3 oz of brie cheese
1 tablespoon of butter
1 tablespoon of honey (optional)
Salt and pepper to taste
Fresh thyme or rosemary (optional)
Instructions
Preheat your oven to 400°F (200°C).
Core and slice your apple into thin rounds.
On a baking sheet, toss the apple slices with honey (if using), salt, and pepper. Roast for about 10-15 minutes until tender and slightly caramelized.
Lay the cheese on one slice of bread, followed by the roasted apples and fresh herbs (if using). Top with another slice of bread.
Spread butter on the outside of the sandwich.
Heat a skillet over medium heat. Place your panini in the skillet and cook for 3-4 minutes on each side until the bread is browned and the cheese is gooey.
Once golden brown, remove from the skillet, slice, and serve.
