Ingredients
- 2 lbs baby potatoes, halved
- 3 tbsp butter, melted
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp salt & black pepper
- ½ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
1️⃣ Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ Prepare the Potatoes – In a large bowl, toss halved potatoes with melted butter, olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper.
3️⃣ Roast – Spread potatoes in a single layer, cut side down, on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.
4️⃣ Add Parmesan – Sprinkle Parmesan over the potatoes and return to the oven for another 5 minutes until cheese is melted and slightly crispy.
5️⃣ Serve & Enjoy! – Garnish with fresh parsley and serve hot
