1 pound of ground turkey
2 medium sweet potatoes, peeled and diced into ½-inch cubes
2 medium zucchinis, chopped into bite-sized pieces
1 small onion, diced
3 cloves of garlic, minced
1 teaspoon of dried Italian seasoning
1 teaspoon of smoked paprika
Salt and pepper, to taste
2 tablespoons of olive oil
½ cup of shredded mozzarella cheese (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, mix the diced sweet potatoes, zucchini, and onion. Drizzle with olive oil and sprinkle with salt, pepper, and half of the Italian seasoning. Toss until evenly coated.
In a large skillet over medium heat, add the ground turkey and break it up as it cooks. Season it with the remaining Italian seasoning, smoked paprika, and garlic. Cook until browned, about 5-7 minutes.
In a 9×13 inch baking dish, combine the cooked ground turkey with the roasted veggie mix and stir gently.
Spread the mixture evenly in the dish and roast for about 25-30 minutes until the sweet potatoes are tender.
If desired, sprinkle mozzarella on top during the last 5 minutes of cooking to allow it to melt.
Let it rest for a few minutes before serving.
