- 3 medium potatoes, diced
- 2 large carrots, sliced
- 2 zucchinis, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup grated Parmesan (optional)
- Fresh parsley, chopped (for garnish)
Instructions

Preheat & Prep:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper.

Season the Vegetables:
- In a large bowl, toss potatoes and carrots with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
- Spread evenly on the baking sheet and roast for 20 minutes.

Add the Zucchini:
- Remove from oven, add zucchini, and toss.
- Roast for another 10-15 minutes until all veggies are golden and tender.

Finish & Serve:
- Sprinkle with Parmesan and fresh parsley before serving.

- Swap zucchini for bell peppers or Brussels sprouts for variety.
