Description

This easy roasted vegetable dish features crispy potatoes, sweet carrots, and tender zucchini, all seasoned with herbs and roasted to perfection. A healthy, colorful, and delicious side dish for any meal!


Ingredients

  • 3 medium potatoes, diced
  • 2 large carrots, sliced
  • 2 zucchinis, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat & Prep:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  • Season the Vegetables:

    • In a large bowl, toss potatoes and carrots with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
    • Spread evenly on the baking sheet and roast for 20 minutes.
  • Add the Zucchini:

    • Remove from oven, add zucchini, and toss.
    • Roast for another 10-15 minutes until all veggies are golden and tender.
  • Finish & Serve:

    • Sprinkle with Parmesan and fresh parsley before serving.

  • Swap zucchini for bell peppers or Brussels sprouts for variety.
  • Drizzle with balsamic glaze for extra flavor.
