1 cup roasted red peppers

1/4 cup grated Parmesan cheese

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, mix together roasted red peppers, spinach, mozzarella cheese, garlic, oregano, basil, salt, pepper, and Parmesan cheese.
  • Slice a pocket into each chicken breast and stuff with the filling mixture. Secure with toothpicks or kitchen twine.
