4 boneless
skinless chicken breasts
1 cup roasted red peppers
chopped
1 cup fresh spinach
chopped
1 cup mozzarella cheese
shredded

1 teaspoon dried basil
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1 tablespoon balsamic vinegar (optional)

Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, mix together roasted red peppers, spinach, mozzarella cheese, garlic, oregano, basil, salt, pepper, and Parmesan cheese.
- Slice a pocket into each chicken breast and stuff with the filling mixture. Secure with toothpicks or kitchen twine.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and drizzle with balsamic vinegar if using.
- Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through and an internal temperature of 165°F (75°C) is reached.
- Remove the toothpicks or twine, let it rest for a few minutes before slicing it for serving.
