4 boneless, skinless chicken breasts
1 cup roasted red peppers, chopped
2 cups fresh spinach, chopped
1 cup mozzarella cheese, shredded
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon balsamic vinegar (optional)
Preheat the oven to 375°F (190°C).
In a medium bowl, combine the chopped roasted red peppers, spinach, mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well.
Butterfly each chicken breast by slicing it horizontally almost through, creating a pocket.
Stuff each pocket with the roasted red pepper and spinach mixture.
Secure the filling inside the chicken using toothpicks or baking twine.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear each side of the stuffed chicken for about 3-4 minutes until golden brown.
Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
