  • 2 tablespoons olive oil

  • Instructions

  • Preheat the oven to 375°F (190°C).
  • In a medium bowl, combine the chopped roasted red peppers, spinach, mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  • Butterfly each chicken breast by slicing it horizontally almost through, creating a pocket.
  • Stuff each pocket with the roasted red pepper and spinach mixture.
  • Secure the filling inside the chicken using toothpicks or baking twine.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Sear each side of the stuffed chicken for about 3-4 minutes until golden brown.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for 5 minutes before serving.
