1 pound zucchini sliced into ½ inch slices
1 pound summer squash sliced into ½ inch slices
2 tablespoons olive oil
3 cloves garlic minced
1.5 teaspoons Italian seasoning
½ teaspoon garlic powder
¾ teaspoon salt
¼ teaspoon ground black pepper
¼ cup grated parmesan
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the zucchini and summer squash slices with the olive oil, minced garlic, Italian seasoning, garlic powder, salt, and black pepper. Toss to ensure the vegetables are well-coated.
- Spread the seasoned squash mixture evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes until the squash is tender and starting to caramelize.
- Remove from the oven and sprinkle with grated parmesan cheese. Return to the oven for an additional 5 minutes to melt the cheese.
- Serve warm and enjoy!
