Ingredients

4 boneless, skinless chicken breasts

½ cup crumbled feta cheese

1 cup fresh spinach, chopped

¼ cup sun-dried tomatoes, chopped

1 tsp garlic powder

Salt and pepper to taste

1 tbsp olive oil

Toothpicks or kitchen twine
Instructions

Prep chicken: Pound chicken breasts to ¼-inch thickness. Season with salt, pepper, and garlic powder.

Add filling: Layer spinach, sun-dried tomatoes, and feta on each breast.

Roll & secure: Roll tightly and secure with toothpicks.

Cook: Heat oil in an oven-safe skillet. Sear chicken on all sides until golden (about 5–6 mins total).

Bake: Transfer skillet to a preheated oven at 375°F (190°C) and bake for 15–18 minutes, or until fully cooked.

Serve: Rest 5 minutes before slicing. Serve with rice or a side salad.
