Description

Ingredients

  • 4 boneless, skinless chicken breasts

  • ½ cup crumbled feta cheese

  • 1 cup fresh spinach, chopped

  • ¼ cup sun-dried tomatoes, chopped

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • Toothpicks or kitchen twine


Instructions

  1. Prep chicken: Pound chicken breasts to ¼-inch thickness. Season with salt, pepper, and garlic powder.

  2. Add filling: Layer spinach, sun-dried tomatoes, and feta on each breast.

  3. Roll & secure: Roll tightly and secure with toothpicks.

  4. Cook: Heat oil in an oven-safe skillet. Sear chicken on all sides until golden (about 5–6 mins total).

  5. Bake: Transfer skillet to a preheated oven at 375°F (190°C) and bake for 15–18 minutes, or until fully cooked.

  6. Serve: Rest 5 minutes before slicing. Serve with rice or a side salad.

Notes

  • Add a pinch of oregano or basil for an extra Mediterranean kick.
