1 ½ cups of all-purpose flour
¼ teaspoon of salt
1 tablespoon of granulated sugar (optional)
½ cup of unsalted butter, cold and cubed
4–5 tablespoons of ice water
4–5 ripe nectarines, pitted and sliced (about 4 cups)
¼ cup of brown sugar
1 tablespoon of cornstarch
1 teaspoon of vanilla extract
1 teaspoon of lemon juice
In a mixing bowl, combine the flour, salt, and sugar.
Add the cubed cold butter and mix until the mixture resembles coarse crumbs.
Drizzle in the ice water one tablespoon at a time until the dough comes together.
Cover with plastic wrap and refrigerate for at least 30 minutes.
Slice the nectarines and combine them in a bowl with brown sugar, cornstarch, vanilla extract, and lemon juice.
Let the mixture sit for 10-15 minutes to allow juices to mingle.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Dust the countertop with flour and roll the chilled dough into a 12-inch circle.
Transfer the dough to the prepared baking sheet.
Pile the nectarine mixture in the center, leaving a 2-inch border, and fold the edges of the dough over the filling.
Brush the crust with milk or beaten egg and sprinkle sugar on top.
