Ingredients

  • 2 salmon fillets (about 6 oz each)

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 4 cups mixed salad greens

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • 1 avocado, sliced

  • 2 tbsp fresh lemon juice

  • 1 tbsp olive oil (for dressing)

  • 1 tsp Dijon mustard


Instructions

  1. Cook salmon: Season salmon with salt and pepper. Heat 1 tbsp olive oil in a pan over medium heat and sear salmon for 4–5 minutes per side until cooked through. Let rest, then flake into chunks.

  2. Make dressing: In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper.

  3. Assemble salad: In a large bowl, toss greens, tomatoes, cucumber, red onion, and avocado with the dressing.

  4. Top and serve: Add flaked salmon over the salad. Serve immediately or chill for later.

Notes

  • Great with grilled, canned, or leftover salmon.
