½ cup whipping cream

2 tablespoons salted butter

½ teaspoon vanilla extract

1 teaspoon coarse sea salt

1 ⅕ cups icing sugar

sifted

100 g dark chocolate

melted


Instructions

  • Preheat your oven to 325°F (160°C). Prepare a 9-inch springform pan by greasing it lightly.
  • In a mixing bowl, combine the graham cracker crumbs and melted salted butter. Press this mixture firmly into the bottom of the prepared pan to form the crust.
  • In a large bowl, beat the cream cheese until smooth. Gradually add the white sugar and cornstarch, mixing until well combined.
  • Add the eggs, one at a time, mixing after each addition. Then, incorporate the whipping cream and vanilla extract until just combined.
  • Pour the cheesecake filling over the crust in the springform pan.
  • Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggly.
  • Once baked, turn off the oven and leave the cheesecake inside for about 1 hour before removing it to cool completely at room temperature.
  • To prepare the salted caramel glaze, combine the white sugar, brown sugar, and corn syrup in a saucepan over medium heat. Stir until it melts into a smooth caramel.
  • Slowly whisk in the whipping cream, followed by the salted butter, vanilla extract, and sea salt. Let it simmer for about 5 minutes until slightly thickened.
  • Remove from heat and allow to cool slightly. Stir in the icing sugar until smooth.
  • Pour the salted caramel glaze over the cooled cheesecake, then refrigerate for at least 4 hours or overnight.
  • Before serving, drizzle melted dark chocolate on top for decoration.
