1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon sea salt
1 cup semi-sweet chocolate chips
½ cup caramel sauce
Flaky sea salt, for finishing
Preheat the oven to 350°F (175°C).
Cream the butter and sugars in a large bowl until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
Gradually add the dry ingredients to the butter mixture, mixing until combined.
Fold in the chocolate chips.
Chill the dough in the fridge for about 30 minutes.
Scoop the cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
Press a small indentation into the center of each cookie for caramel.
Bake for 10-12 minutes, slightly underbaked for gooey texture.
Drizzle caramel sauce into the indentations and sprinkle with flaky sea salt as soon as they come out of the oven.
Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
